In the midst of a pandemic, where meat shortages abound, consider buying a can of pink salmon and make delicious, healthy salmon cakes! Add chopped onions, chopped celery, a teaspoon of minced garlic, bread crumbs, one egg white, a sprinkle of garlic salt and Old Bay seasoning. Be sure to remove all bones, and mix the ingredients. Coat each salmon cake with corn meal. Add a teaspoon of olive oil in a skillet. Turn heat to low-medium and cook for 5 minutes on each side.
